Can I get an AMEN for all the recipes out there that are stupid easy but still incredibly delicious? I appreciate you.

I got this mousse recipe from a friend and decided to jazz it up a lil bit. I’m a huge mint chocolate chip fan, always have been and forever will be. There’s something so refreshing and delicate about that combination that I just can’t get enough of!
Side note, these are PERFECT for July 4th which is right around the corner! Seriously, how is it mid May already? I swear it was just Christmas last week.

for the chocolate mousse:
1 bag (12 oz) semi-sweet chocolate chips
4 cups heavy cream
1/2 cup powdered sugar
2 teaspoons vanilla extract

for the mint whipped cream:
1 cup heavy cream
1 cup fresh mint, rough chopped
1/4 cup sugar
3 tablespoons water
1 cup heavy cream
1 cup fresh mint, rough chopped
1/4 cup sugar
3 tablespoons water
2 cups fresh berries for topping (I used blueberries, blackberries & strawberries!)
1. Pour only 1 cup heavy cream into a small saucepan and bring to simmer. Add chocolate chips and remove from heat, stirring until melted.
2. With an electric mixer, beat remaining heavy cream + powdered sugar + vanilla extract until peaks begin to form. Gently fold in about 1/3 of the whipped cream to the chocolate mixture. Then add in the rest to combine.
3. Chill in fridge for a couple hours or overnight if possible to get that perfect mousse texture!
4. To make the whipped cream, grab a small saucepan and bring sugar, water and chopped mint to a boil. Once boiling, remove from heat and let it sit for about 15 minutes. The mixture will become super sticky and syrupy, no worries – this is good!
5. Beat heavy cream with electric mixer until stiff peaks form, about 2 minutes-ish.
6. Use a strainer to pour syrup into whipped cream and beat again until combined.
